Klunker's BBQ potatoes


You will need a 9x13 glass dish also for this recipe

4-5 medium potatoes, washed and cut into 1 inch pieces. (you can use sweet potatoes also)
1 medium onion, cut into 1 inch pieces.  (reserve half for sauce)

1 14.5 oz. can of black beans, drained and rinsed
1 medium yellow bell pepper, cut into 1 inch pieces

For the sauce:

Place the following into a blender

1 15oz. can of tomato sauce
1/2 yellow onion from above
2 cloves garlic, peeled and smashed
1/4c balsamic vinegar
1/4 tsp. dried thyme
1 tsp. dried basil
1 tsp. dried chives
1 tsp. sweet paprika (you can add smoked paprika if you want extra smoky)
1/2 tsp. Italian seasoning
2 tsp. starch (I used tapioca starch)
2 Tblsp. maple syrup (or sweetener of choice)
1 tsp. salt
1/2 tsp. pepper

Blend together until smooth (about a minute or so)


Preheat oven to 375° (190°c)

Place veggies and beans into the 9x13 pan.  Pour the sauce over the veggies, and mix well with a spoon.  Make sure everything is covered well.  Even out the layer so everything cooks even.

Place a layer of parchment over the top, and then aluminum foil.  Seal well, and place into oven.  
Bake for 1 hour, no peeking.
After 1 hour, take the cover off, and bake uncovered for 15 minutes.
Check potatoes to make sure they are fully cooked.  If not, cook an additional 15 minutes.

Remove from oven and serve.
You can add other veggies and adjust the time down if needed.
