Klunker's marinated mushrooms

The other day, I went to Costco, and they had some amazing marinated mushrooms on sale. No oil, and all compliant ingredients.  I pretty much ate the whole bottle in two days.  It was not super expensive, but could I make my own?  Would it be worth the time?  Cheaper?
Well, let me tell you this, IT IS WORTH IT.  In a pinch, I will use those from Costco, they are great.  But, I will also try and keep some of my own on  hand.
This recipe is easy, and comes together quick.  It will keep in the fridge for quite a while, it has a lot of vinegar in it.  They can be eaten on their own, but also are great added to recipes. At the end, I will give you an idea.


2 lbs. mushrooms (I used cremini, but you could use button.) cleaned and sliced in half
5-6 cloves garlic, peeled and sliced thin
1c rice vinegar (yes, you can use other types, I just like the flavor of rice vinegar)
1/2c aquafaba (liquid from a can of chickpeas or any white bean)
1/2c water
1/4c brown rice syrup (or any sweetener you want, like maple syrup or date syrup)
1/2 tsp. red pepper flakes (this can be adjusted down for less spicy)
1/2 tsp. dried oregano
1/2 tsp. dried basil 
1/2 tsp. Italian seasoning

You will also need a large pot, full of water to boil.  Also a large bowl for mixing.

While you are assembling your ingredients, bring a large pot of water to a boil on the stove.

When the water comes to a boil, add the mushrooms.

Stir them all in, and boil for 5 minutes.

While the mushrooms are boiling, get out a large bowl, and combine all the rest of the ingredients.  

Whisk them all together, and set aside

After 5 minutes, remove the mushrooms from the stove, and drain into a large strainer.

Let drain for 1 minute, and then add the hot mushrooms to the marinade

Stir well to combine

Let sit for 10 minutes, and stir again well

Now is the hardest part.  You will want to cover the mushrooms with plastic wrap, and let cool completely.  After they have cooled to room temp., place in the fridge for a couple hours.  Trust me, they are great cold.
After the long wait, you can start using these delicious, zesty, spicy nuggets.
Today, I decided to use them in a pasta salad.
Here is that recipe

1 package of spiral noodles, cooked according to package direction, drained well
1/2 large cucumber, sliced up
1 red bell pepper, sliced thin
1 can of chickpeas, drained and rinsed (hopefully you saved them from the above recipe)
2 green onions, sliced thin
1/4 cup nutritional yeast
1 cup of your marinated mushrooms with liquid (I used just a little more liquid)

Combine in a large bowl, and with your hands, toss together well.  Don't be shy, your hands are the best tools.
Serve cold, and you will be happy.  This makes 3-4 servings.

I hope you try these recipes, and enjoy them as much as I do.  It is so worth all the effort, because you know all the ingredients and it is homemade, which is always better.
