IP Rice Pudding

IP Rice Pudding


1c sushi rice (I used white, you can use brown sushi rice)
1c water

3c unsweetened almond milk (or plant milk of choice) divided
1/2c raisins 

2 tsp. cinnamon, divided
4 tablespoons maple syrup or agave syrup
2 tsp. vanilla extract
a pinch of salt (optional)


Place all the ingredients into the IP pot, (except the divided 1 1/2 c almond milk and 1 tsp cinnamon)  Stir well to combine.  Place lid on IP and the nob to seal.  Turn the IP on and push the porridge button.
When the time is up, allow to NPR for 5 minutes, and then manual release remaining pressure.
Remove lid and add the 1 1/2c almond milk and the cinnamon.  Stir well.  If you like it sweeter, add a little more maple syrup to taste.
Serve hot or cold.

**I used sushi rice because of the high starch content.  It makes it more "pudding" like. 


  1. I don't have a porridge button on my IP. How long would I cook it?

    1. When I push that button, it says 20 minutes. :)
