Klunker's Carolina BBQ sauce
I have a friend at work, who is from North Carolina (well, she is from all over, but most recently from NC) and she wanted me to make a recipe for the great BBQ sauce they have back there.
Now, being a Utah boy, born and raised, I was not familiar with it. I have always had the thick, tomato based stuff. So, to have a thin barbecue sauce was different. But, I had to try, and I am so glad I did. This stuff is spicy, a little sweet, and you will not need a ton of it to make your food sing. (Now don't freak out about the brown sugar, you are not drinking the whole thing at one sitting)
3/4 cup good apple cider vinegar
3/4 cup rice vinegar (not seasoned)
1/3 cup tomato sauce
3/4 cup dark brown sugar
2 tsp. sriracha
2 tsp. red pepper flakes
1/4 tsp. fresh ground black pepper
1/4 tsp. kosher salt
1/4 tsp. cayenne pepper
1/4 tsp. mustard powder
Mix everything in a bowl (I used my big glass measuring cup) until the sugar dissolves.
Pour into a small sauce pan, and turn the heat on (Medium high) and stir. You want to keep stirring until it comes to a simmer. Then, turn it off and take off the stove. Let cool completely, and you are ready to flavor all your dishes. This would be great on anything barbecued, any greens, pretty much anything.
