Mango pineapple salsa

Mango pineapple salsa

I will be the first to admit that when it comes to mangoes, I am a sucker.  I love the sweetness and just the beautiful fragrance they have.  So to make a salsa out of them only makes sense.  
This salsa is super easy to make too.  It is fast, because it uses some pre made ingredients, and only gets better with time.

Ingredients:
1 ripe mango, peeled and cut away from the seed, diced small
1 20oz. can of crushed pineapple.  Make sure it is the kind in 100% juice, no      added ingredients.
1 4oz. can of chopped green chiles 
1 red bell pepper, washed, seeded and diced small
2 tablespoons of chopped, fresh cilantro 
Juice of 1/2 a lemon
dash of salt (optional)

Now for the easy part.  As you prepare each ingredient, just put into a large bowl.  Go down the list and add one at a time.  No need to drain anything or chop perfectly.  
When it is all in there, stir together very well.  Cover with plastic wrap, put in fridge for about an hour, and you are ready to serve.  
As I said above, it gets better with time, so if it sits for a day in the fridge, even better.  
Most of all, make this your own by adding what you want.  Lime instead of lemon?  Maybe a dash of chipotle powder, or a fresh jalapeno?
Serve with chips or maybe on a sweet potato taco.  :)
