Carrot apple muffins

 
Carrot apple muffins

I am not normally a muffin person, but today I woke up and was in the mood for some.  I love carrot cake and I love date paste, so I decided to make up this recipe to take care of both.  This recipe is pretty straight forward and easy.  Mix the wet with the dry and bake. 

Ingredients:

Wet:
1/2 c date paste (heaping)
1 packed cup of grated carrots
1 med/large red apple grated with peel
1 c unsweetened applesauce
1/2c golden raisins 

Dry:

1 1/2 c whole wheat pastry flour
1/3c ground oats (oat flour)
2T chia seeds
1 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon 


Pre-heat oven to 375*

You will need two bowls for this recipe.  Combine the wet ingredients together.  Make sure they are all mixed very well.  Set aside.  In another large bowl, combine all the dry ingredients and with a wire whisk make sure the dry ingredients are very well blended.

With a wooden spoon, combine the wet ingredients into the dry.  Fold together just until mixed and all the dry is now wet.  Do not over mix. 
Allow to sit for 5 minutes and then spoon into lined muffin pan.  Fill just shy of full.  They will rise pretty high, but that is the whole idea with a muffin, a nice top!
Place in oven and bake for 20-28 minutes, or until a toothpick comes out clean.  Don't over bake.  Allow to cool for 10 minutes before you remove from pan.
