Berry baked oatmeal

It was a beautiful sunrise today and it was my inspiration for a beautiful breakfast.  As I got my blank paper out to write a recipe, I started about recipes I have never tried.  When I woke up I was going to make some oatmeal, so I used that as my base.  I had seen so many people post pictures of their baked oatmeal and always wanted to try it.  So today I wrote a recipe that came out above my expectations.  There was no sugar, salt or oil used today for this recipe and it is full of healthy berries!

Ingredients:

Preheat oven to 375*.  You will need a glass 9x13 pan also.


2c cashew milk (or any non dairy milk)
1/4c maple syrup
1/4c date paste
2T chia seeds (you could used ground flax seed also)
1 tsp. ground cinnamon 
2 tsp. vanilla extract (always the real stuff)

2c oats (not instant)
2T chopped walnuts or almonds
2/3c frozen or fresh blueberries
1 1/3c quartered frozen or fresh strawberries
2/3c fresh or frozen blackberries

Alright, let the magic begin!

In a large bowl, combine the first 6 ingredients.  Whisk until well blended.  Let stand for 10 minutes.

 While the liquid is sitting, combine the next 5 ingredients in your 9x13 pan.

After the liquid is ready, whisk one more time and pour over the oat mixture.

Make sure that the liquid is evenly distributed.  I tilted the pan around and then held it up to look under it to make sure the liquid had gone to the bottom.
Place in the oven and bake for 35-40 minutes.  You want the top to be a deep, rich brown.

 Remove from oven, and let sit uncovered for 10 minutes.  This part is important. (Much easier to remove)

Serve hot or room temp. Add extra fresh berries on the side if you would like.
